A Student-Run Coffee Shop Program in Action
Every Wednesday and Friday morning, the halls of our Adult Preparation Program come alive with the warm aroma of fresh coffee and the buzz of purposeful activity. Tucked into a cozy corner of the building is the student-run coffee shop, a small operation with a big mission. Under the guidance of staff leaders Jo Zillman and David Nickum, students work together to learn real-world job skills, build confidence, and serve their school community with pride.
Building Real World Job Skills Through a Student-Run Coffee Shop
The coffee shop is a hands-on learning environment where students practice communication, teamwork, money management, and customer service. Every shift starts with a quick huddle: reviewing the menu, organizing supplies, and assigning jobs. Then, once the doors open, the students step confidently into their roles.
Hands-On Roles That Support Skill Development
Some students take customer orders, practicing friendly greetings, active listening, and accuracy. Others prepare drinks, hot chocolate, tea, and classic drip coffee, carefully following steps to ensure every cup is just right. A few stand behind the cash box, counting change, handling bills, and learning to track sales. No matter the task, each student contributes something important, and together they keep the operation running smoothly.
Setting Goals and Growing Through a Student-Run Coffee Shop Program
The students’ teamwork is driven by a shared goal: earning enough money to purchase an espresso machine. With this addition, the coffee shop will expand its menu, teach more advanced barista skills, and offer customers an even better experience. The students take great pride in this goal, celebrating each day’s earnings and tracking their progress on a colorful chart posted behind the counter.

But the magic of the coffee shop goes beyond dollars earned. Jo and David have created an environment where students feel supported, capable, and valued. They encourage problem-solving, model professionalism, and celebrate each student’s growth, whether it’s mastering a new task, handling a rush of customers, or simply greeting a staff member with confidence.
